Introduction

This is a variation of a typical twice baked mashed potatoes. I used red potatoes and only baked it once. This is a variation of a typical twice baked mashed potatoes. I used red potatoes and only baked it once.

Ingredients

    2lbs red potatoes
    0.5 cup lowfat buttermilk
    0.25 or a quarter stick of butter
    0.5 cup sour cream
    5 slices applewood smoked bacon
    2 oz cheddar cheese

Directions

boil potatoes in water until fork tender. while potatoes are boiling dice up the bacon and cook just until crisp. Drain the fat off bacon with a paper towel on plate. Once potatoes are fork tender drain them. Add butter, sour cream, buttermilk, and bacon to the pot with the potatoes. Use and electric mixer or mash by hand. Spoon mixture into a baking dish. Sprinkle cheddar cheese over the top and place into a preheated oven at 350 degrees for approximately 10 minutes to melt cheese. Then turn up to broil for a few minutes to brown the top of the mashed potatoes.
