Ingredients

    Red Onions minced 3 Tbsp
    Red Bell Peppers minced 6 Tbsp
    Canned Whole Kernel Golden Corn 1/3 Cup
    Raw Cilantro chopped 3 Tbps
    Cumin Ground a Dash
    Kosher Salt a Dash
    Spinach uncooked 2 cups
    Mexican Shredded Cheese
    2 Eggs
    6 Tbsp Egg Whites

Tips

The blended mixture from the eggs before cooking should be have a little bit of foam on top. The color shouldn't be a dark green, just a hint of green, that'll be the natural juice of the cilantro being mixed into egg mixture.


Directions

1. Blend the eggs and egg whites together with the cumin, salt and a tablespoon of cilantro.
2. Put that into the skillet and cook on medium heat.
3. Sprinkle with cheese then add spinach then add the *corn salsa.
*Corn salsa is the onion and peppers minced up and the cilantro chopped up mixed together with the corn.
