Ingredients

1/2 Avocado (diced)
2 Cups Jicama (diced)
1/2 large Cucumber (diced)
1/2 cup Mango (diced)
12 medium Tomatoes (chopped)
3 medium scallions (thinly sliced)
1/4 tsp Fresh Chili Pepper (finely chopped)
1 Tbsp Extra Virgin Olive Oil
1 Lime (juice of)
1/8 tsp Cumin
A few pinches of Celtic Sea Salt
Tips
Original recipe calls for 2 Tbsp fresh Cilantro/Coriander (finely chopped). I hate cilantro so I just left out.
Directions
Combine all ingredients in a large mixing bowl, toss and serve
