Introduction

This is my own recipe!! I came up with it after eating a wrap at Roly Poly and thinking - hey, I can make this at home,but way healthier. So I did. This is my new favorite lunch. Ingredients

    1 OLE! High Fiber tortilla (these are amazing and Wal Mart carries them - SO much better for you!)
    1 oz shredded cabot 75% light Vermont Cheddar
    1.5 tbs Kraft light BBQ sauce
    4 oz of cooked chicken, chopped
    1 tbs chopped red onion
    3 oz (or less) baby bella mushrooms (sauteed in organic
    PAM olive oil)
    9 spinach leaves


Tips

The options are endless. They serve something similar to this with a light ranch dressing and RP. That would be good but I like to keep the fat low so dipping it in extra BBQ sauce is fine by me! I LOVE THIS litle wrap.


Directions

preheat oven to 400.

spray pan with oliveoil. Place tortilla on it, then layer ingredients in the following order: bbq sauce, spinach, onions, chicken, mushrooms, cheese.

Bake for 4 minutes or until cheese is melted.

Pull it out and roll it into a wrap and you're good to go - just be careful that you let the BBQ cool a little!
