Ingredients

    1 T olive oil
    1 large onion, chopped
    3 cloves garlic
    1 1/2 lbs. stew beef
    1 14.5 oz. can petite cut diced tomatoes
    2 T chili powder
    8 oz. tomato sauce
    6 oz. tomato paste
    14 oz. can red kidney beans
    Cilantro
    Tabasco Sauce
    Grated Cheddar
    Sour Cream

Directions

In a heavy sauce pan, heat olive oil and add chopped onion and garlic. Saute until clear. Add in stew beef and brown. Pour beef mixture into a 5 qt. crockpot and dump can of tomatoes over. Stir in chili powder. Cook on low for 6 hours. Add in tomato sauce, tomato paste and kidney beans. Cook for an additional 1 hour or 2 until beef is tender.

Serve with fresh chopped cilantro, tabasco sauce, grated cheddar cheese and sour cream. (Not included in calorie count.)
