Ingredients

    1 c chopped onion
    1 c chopped yellow bell pepper
    3 garlic cloves minced
    2 tbsp olive oil
    1.5 tsp oregano dried
    1.5 tsp ground cumin
    2 tsp chili powder
    2-15 oz cans black beans rinsed and drained
    2.5 cups cooked ground or chopped turkey
    1-15oz can pumpkin puree (not filling)
    1-14.5 oz can diced tomatoes
    3 cups chicken broth

Directions

Saute onions, peppers, garlic in oil until soft. Add in spices, cook 1 min. Transfer to slow cooker. Cover and cook on low for 7-8 hours.

Serving Size: Makes 6 -1.5 cup servings
