Introduction

High fibre, great tasting muffin! High fibre, great tasting muffin!

Ingredients

    Wheat Bran 2 cup
    Milled Flaxseed 2 tbsp
    Whole Wheat Flour 1 cup
    Splenda Brown Sugar .5 cup
    Baking Soda 2 tsp
    Baking Powder 1 tsp
    Salt .5 tsp
    Cinnamon 2 tsp
    Apple Sauce Unsweetened 1 cup
    Apple 1 large
    Yogurt (Vanilla or Plain) 1 cup
    Egg Beaters .75 cup
    Vanilla 1 tsp


Tips

These are not overly sweet muffins as I like to have them for breakfast but you could add more of the brown sugar to sweeten them up.
I have adapted this recipe to other flavors such as double chocolate chip or pumpkin spice.

Directions

Preheat oven to 350 degrees.
Combine dry ingredients including apple in a medium sized bowl.
Mix wet ingredients together then blend with dry ingredients without over-mixing.
Put scoop of mixure in lined muffin tins.
Bake for approximately 22-23 mins.
Remove from pans and allow to cool.
They will stick to the liner until cooled completely and then some.
