Number of Servings: 12

Ingredients

    Butter, salted, 2 tbsp
    Cumin seed, 1 tbsp
    Pepper, black, 1 tsp
Pepper, red or cayenne, 1 tsp
    Salt, 1 tsp
    Canola Oil, 2 tbsp

    Onions, raw, 2 cup, chopped
    Ground beef, lean, 16 oz
*Green Chili Peppers, canned, 1 cup

Tips

Frank's red hot sauce is a good seasoning if you don't feel like dealing with the spices. You can also get packets of taco seasoning, but this recipe is gluten-free. :)

Directions

1. in a skillet melt the butter and the oil together until HOT

2. add the chopped onions and sautee until brown.

3. add ground beef and chopped up green chilis and spices to taste (seriously, the amounts above are minimums, knock yourself out with spices).
cumin
salt
pepper
red pepper flakes

4. cook until the ground beef is browned.

5. drain off excess fat and serve in a bowl, stuff in the lettuce leaves...double up on the lettuce leaves, they get kind of messy single wrapped.

serve with brown rice and re-fried beans

Serving Size: 12 lettuce wraps stuffed with 1/4 cup of the beef mix
