Ingredients

    2 Tbs Extra Virgin Olive Oil
    1 large onion chopped
    4 cloves of garlic, pressed or chopped
    2 Tbs fresh ginger root, peeled and minced
    1.5 Tbs red curry powder
    1.5 Tsp ground cinnamon
    1 Tsp ground cumin
    2 bay leaves
    1.5 cups red lentils, rinsed and picked over
    8 cups low-sodium non-fat chicken broth
    3 Tbs fresh cilantro, chopped
    3 Tbs fresh parsely, chopped
    2 Tbs fresh lemon juice
    2 Tbs hot mango chutney
    8 0z plain non-fat yogurt

Tips

I stir in the yogurt in my bowl to make a creamy soup.


Directions

Add oil to a heavy stock pot and heat over medium heat. Add onions, garlic, ginger, jalpenos, curry powder, cinnamon, cumin and bay leaves and simer for 5 min or until onion is translucent.

Add lentils, and chicken broth and bring to a boil. Reduce heat and simmer for 40 min.

Discard bay leaves and stir in fresh parsely and cilantro, lemon juice, and chutney. Add two cups per bowl and a dollop of yogurt.
