Ingredients

    3 tbsp oil
    1 Eggplant, chopped
    1 large onion, chopped
    Red Ripe Tomatoes, 2 large, chopped
    Tofu, extra firm, 1 block, cubed
    Salt, 1 tsp
    5 cloves garlic
    Curry powder, 1 tsp
    Ground tumeric, 0.5 tsp
    Cumin, 1 tsp
    Ground Coriander seed, 1 tsp
    Cayenne Pepper, 0.5 tsp
    Cinnamon, generous pinch
    Fresh cilantro (optional)
    Rice or bread to serve

    Oikos Organic Greek Yogurt, Plain, 18 oz

Directions

Fry tofu in oil till golden brown. Add eggplant and onion, fry about 2 minutes till onion starts to collapse. Add tomatos and spices. Add a few ounces of water if needed. Reduce heat, cover and simmer for about 10 minutes. Stir, taste, add more cayenne/garlic/salt if desired.

I usually make this spicy and eat with plain yogurt. It can be served with bread or rice.
