Ingredients

1 tsp canola oil
4 garlic cloves-minced
2 tsps chipotle in adobo-minced
1 cup chopped cilantro
1/2 cup orange juice
1TB Worcestershire sauce
1 lb skinned boneless chicken breast
1tsp yellow mustard
Salt & Pepper
Tips
Can top with some chopped onion, chopped avocado, a squeeze of lime, a dab of reduced fat sour cream, a few shreds of cabbage and/or a sprinkle of cojita cheese.
Directions
1.) Heat oil in 12 in skillet over medium heat until shimmering. Stir in garlic and chipotle and cook until fragrant, about 30 seconds. Stir in orange juice, worcestershire sauce and half the cilantro.
2.) Nestle chicken in skillet and bring liquid to a simmer. Cover, reduce heat to medium low and cook until chicken done, 6 to 9 minutes per side depending on thickness of chicken.
3.) Transfer chicken to a plate and continue to simmer sauce over medium heat until thickened and reduced to a quarter cup. While sauce is simmering shred chicken with two forks.
4.) Remove sauce from heat and stir in yellow mustard. Add sauce and remaining cilantro to shredded chicken and toss to mix. Add salt and pepper to taste.
5.) Heat up your choice of tortillas (not included in calorie count) and enjoy with chicken and your choice of toppings.
