Introduction

Ingredients

    1 cup chopped onion
    4 tsp minced garlic
    6 T white wine
    2 15 oz. cans dice tomatoes with chilis
    1 c diced green bell pepper
    1 c diced red bell pepper
    1 c sliced mushrooms
    16 oz. frozen sweet corn
    4-6 T medium or hot salsa
    1 tsp dried basil
    1 tsp Italian seasoning
    4 cups cooked brown rice
    black pepper/salt to taste

Tips

I used Pace medium salsa, which gave the rice a surprising little kick. Goes great with tortilla chips or club crackers. Freeze leftover in single serving size for an easy and tasty lunch or supper.


Directions

In a wok, saute the onions and garlic in the wine til tender.
Add the tomatoes, peppers, mushrooms, corn, salsa, basil and Italian seasoning.
Bring to boil and simmer for 8-10 minutes. Remove from heat.
Add cooked rice and mix it all together. Season to taste.
Return to low heat and simmer 30 minutes to let the flavors all come together.
Makes 11 1-cup servings.
