Introduction

Brown rice hot cereal is pricey, and I can't do oatmeal. I was looking for a hot, filling breakfast that would carry me all the way to lunch. This is great to make ahead, a doubled batch would work in the crock pot. I also add 3 cardamom pods, when I have them handy. Brown rice hot cereal is pricey, and I can't do oatmeal. Ingredients

    Trader Joe's Unsweetened Coconut Milk, 2 cup
    1 cup rice milk
    2.5 cups water
    Brown Rice, medium grain, 2 cup
    Honey, 1 tbsp
    Salt, .75 tsp
    Trader Joe's Turbinado Sugar - Raw Cane Sugar, 3 tsp
    Almond, Raw, Sliced, 0.25 cup
    Cinnamon, ground, 1 tsp

    Dried Cherries, .25 cup
    Raisins, .5 cup, packed
    Vanilla Extract, 1 tsp
    *Almond Extract, .5 tsp

Tips

While this was cooling in the pot, I used my hand blender to make the dish extra-creamy without adding any fat or dairy.


Directions

Rinse rice until water runs clear, add coconut milk, rice milk, water, rice, almonds, salt, honey, sugar, cinnamon, and 3 cardamom pods if you have them.

Bring to simmer, cover and cook for 30 minutes.

Add dried fruit, cover, and cook another 30 minutes, until liquid has been absorbed.

Remove from heat, add vanilla and almond extract.
