Ingredients

    Butterball Hot Italian Turkey Sausage 3-4 links
    Summer Squash 1 cup, diced
    White Onion 1/2 cup, chopped
    Mushrooms, sliced 1 cup
    Beef Broth, 1 cup
    Red Wine, 4 fl oz
    Garlic, 4 tsp
    Rosemary, dried, 1 tbsp
    Rotel Diced Tomatoes & Green Chilies 10 oz. can
    Uncle Ben's Instant Whole Grain Brown Rice, 1 packet
    Olive Oil, 1 tbsp
    Salt, 1 tsp
    Pepper, black, 1 tsp

Tips

Fresh herbs, like basil and parsley can be added. Any type of squash, zucchini, eggplant, etc. Use plain diced tomatoes and sweet sausage if you don't like a little heat.


Directions

1. Cook rice according to package, in the meantime,

2. Cut the Italian sausage into bite sized pieces and saute them in a skillet (medium heat) with a little olive oil. Remove from pan and set aside.

3. Saute onions about 5 minutes, add garlic for about a minute. Add beef broth, squash and mushrooms, add red wine and cook down for about 5 minutes.

4. Add the sausage, tomatoes, rosemary, salt & pepper. Cover and simmer for about 20 minutes.
