Ingredients

    Atlantic salmon 100g
    Alfalfa sprouts 0.25 cup
    Iceberg lettuce 0.25 cup - shredded
    Yellow sweet corn, canned - 0.25 cup
    Cherry tomato, - 1 diced
    Avocado - 0.25 fruit diced
    Cucumber - 0.25 cup, peeled and diced
    Baby potato - approx 50g

Directions

Mix all salad ingredients together (except potato).
Heat frying pan with one table spoon of olive oil.
Cook salmon in pan until brown and crispy on both sides
Cook potato in microvave for 90 seconds whole with skin.
Add one table spoon of olive oil and one table spoon of balsamic vinegar to salad and toss. Serve
