Ingredients

1 tbsp olive oil
550 grams Lamb, Cubed
1 medium Onions
3 Garlic cloves, crushed
2 tsp Ginger, cut into fine strips
20 gram(s) red chilli
2 Plums, quarted
1 medium Carrots
1 can Canned Tomatoes
1 tsp ground coriander
1 tsp ground cardamon
1 tsp ground cumin
1 tsp tumeric
1 tsp all spice
1/4 tsp cayene pepper
1/8 tsp chilli powder
1 beef oxo cube, crushed
4 cup Sweet potato cubes
Tips
Serve this with a garden salad or with a little steamed rice.
Directions
heat oil in a saucepan, add ginger, garlic, chilli and onion, cook stirring for a few minutes. Add the spices cook another minute or so until nice and fragrant.
Add the meat and stir until browned all over, cook for 5 minutes, then add carrot, plums and tomatoes. Crush oxo cube and stir through, lower heat to simmer and cook for 90 minutes, stirring occasionally, then add in the sweet potato and stir through, cook a further 30 minutes.
