Introduction

Vegetarian pinto beans with a bit of a smokey/chili/baked bean twist. Vegetarian pinto beans with a bit of a smokey/chili/baked bean twist.

Ingredients

    2 cups dried pinto beans
    1 cup chopped onions
    3 cloves of garlic, minced
    6 cups vegetable broth
    8 oz. tomato sauce
    1/2 cup salsa (Pace medium)
    1/4 cup Molasses
    1/4 teaspoon liquid smoke
    1/4 teaspoon ground ginger
    1/2 tablespoon cumin seeds, ground
    1 tablespoon chili powder
    Unrefined sea salt and fresh ground black pepper to taste.

Tips

You can forget about the beans and bake for 8 hours or more and it won't hurt the beans at all. The flavors just come together that much better.


Directions

soak pinto beans over night, or quick-soak in 6 cups water by bringing to a boil for two minutes, remove from heat and let soak for 3 hours. Add water to cover beans if necessary.
Drain and rinse beans, set aside.
In a Dutch oven with the burner at medium high heat, add the olive oil and onions, saute for 3-5 minutes. Add garlic and saute for additional 3-5 minutes.
Add tomato sauce, salsa, vegetable broth. Stir it up and add the rest of the ingredients and bring to boil.
Remove from heat, cover.
Into the oven at 250 for 4 hours.
