Ingredients

    1 Thomas English Muffin (Light / Multigrain)
    2 poached eggs
    4 thin tomato slices
    2 thin slices of red onion
    1 T capers
    2 oz. Alaskan Smoked Salmon
    Salt & pepper to taste
    Paprika for color on top of egg

Tips

Easy salt due to Salmon already having salty flavor.
Consider avocado to add some more creaminess.
Ensure eggs are not over-poached (hard yolk) which will make less creamy.
If too dry, consider sauce.


Directions

Poach eggs (less than 4 min to ensure yolks are creamy)
Toast muffins (crispy is good)
Layer salmon, onion slice, tomato and poached egg onto muffin. Add salt / pepper / paprika. Sprinkle capers.
