Number of Servings: 4

Ingredients

    1/2 lb lean ground Beef (or turkey, chicken or pork)
    1 small or medium onion, peeled and diced
    1/2 green pepper, seeded and diced
    1 clove garlic, minced (less or more according to tastes)
    15.5 oz can Brooks Chili Hot Beans
    14 oz can Diced tomatoes in juice, no salt added
    1 8-0z can V8 juice, Low sodium (or tomato juice, or water if no juice available)

    Seasoning to taste: salt, black pepper, cumin, chili powder, paprika, cayenne


Tips

Makes 4 - 1 cup servings. Secret ingredient is the BROOKS CHILI HOT BEANS, has beans with sauce and seasonings already in it! Great for 2 people, with leftovers. Double, triple or quadruple for larger groups or to save some for another day.


Directions

1. Brown the beef with diced onion and green pepper. Drain grease and return to pot.
2. Add beans (and sauce), tomatoes, juice and seasonings to taste.
3. Stir together. Simmer for 30-45 minutes, or longer if desired.
4. (Optional) - serve over noodles; and/or pass crackers, shredded cheddar cheese, diced raw onions, diced raw green peppers.
