Ingredients

    in order to do this I first cooked the steel cut oats. I actually used about 2/3s to 3/4 cups of cooked oats.

    Steel Cut Oats, dry, 0.25 cup
    Banana, fresh, 1 medium (7" to 7-7/8" long)
    Egg, fresh, 1 large
    Vanilla Extract, 1 tsp
    Cinnamon, ground, 1 tsp
    *Crisco Pure Vegetable Oil, .33 tbsp

Directions

mash banana into rest of ingredients except for oil. Put oil into cast iron 8" skillet heated on high. Heat lid on high on separate burner. Pour entire amount into skillet and cover with heated lid. Turn to low and cook for 15 minutes. Cut into 4 wedges, flip and continue to cook for 5 more minutes.

Serving Size: makes 4 wedges, 2 per serving

    Very Good
    Wasn't very sweet. I forgot to add the vanilla. I did add chopped walnuts. Could have let cook a bit longer for a crispy touch. We drizzled local honey on top for added sweetness. Also I added a tablespoon of flax. Kids loved it, as did I. A side of fresh blueberries. Mmmmmmm. - 7/20/14
