Pumpkin Lentil Stew

1 cup lentils, dried
1/4 cup onions, chopped
8 oz mushrooms, quartered
1/2 cup carrots, chopped
1 cup broccoli, chopped
1/2 cup asparagus, sliced in 1' pieces
1 cup sweet corn
6 cloves garlic
1 jar American Spoon Foods Pumpkin Chipotle Roasting Sauce
I used up the vegetables I had in my refrigerator, but you can substitute your own. I considered adding pasta sauce, which should work well, but I had this Pumpkin Chipotle Sauce which I thought would work well with the lentils and mushrooms.
Chop vegetables and add to slow cooker. Add drained lentils and Pumpkin Chipotle Roasting Sauce.
Cook on Low setting for 2 hours or until vegetables are softened. Stir as needed.
Add lentil cooking water if necessary.
Serving Size: Makes 4 servings
