Number of Servings: 4
Ingredients
2 medium potatoes, diced
half ear of sweet corn, kernals sliced off
1/4 cup fresh or frozen peas (optional)
40 g lean ham, cubed
20 g cheddar cheese, grated (optional)
4 large fresh eggs
1/4 c milk
salt & pepper
Tips
serve with salad, have 2 serves for a main meal of day
Directions
place diced potaoes in pot of water & boil for 7-8 minutes.
brush oil in a 8 inch diameter oven dish, heat a non-stick frypan and toss in corn, ham & peas. Heat until corn changes colour while mixing.
Strain potatoes and place in oven dish with corn, ham & peas.
In a bowl crack 4 eggs & add cheese & milk along with salt & pepper, whisk with a fork till yolks are broken. Pour into oven dish, mix a bit with fork & place in oven @180-200 degrees celsius for 30 minutes or until set & golden on top
