Introduction

This is a very simple crockpot chili that my kid loves. This is a very simple crockpot chili that my kid loves.
Number of Servings: 14

Ingredients

    1lbs ground beef
    2 small cans Diced tomatoes (I like the Del Monte with the zesty green chili)
    1 can tomato paste (I use the tomato and garlic option)
    2 small cans light red kidney beans (Drain only 1 can)
    3 Cups pepper slices- you can use fresh or frozen, I have started using the mixed bag of frozen pepper strips
    1 cup diced onion
    1 clove garlic or to taste
    1-2 packs of chili seasoning depending on taste

Tips

I usually prepare this the night before, when I leave in the morning turn the crockpot on low. The Chili is ready when we walk in the door.


Directions

1. Mix ground beef with about a 1/4 of a packet of chili seasoning, and garlic.
2. Brown in skillet.
3. Mix all other ingredients into crockpot.(Use a crockpot liner for ease in cleaning)
4. Once thoroughly mixed add ground beef, I do not drain the meat as I us the lean option. This adds to the flavor. However, if you choose to use a higher fat content, I would opt to drain off some of the fat before adding to the other ingredients.
5. Mix and cover.
6. Let simmer in crockpot on low for 5-8 hours. If you would like it done sooner you can cook it on high for about 2-3 hours.
