Ingredients

    1 cup diced onion
    3 cloves of garlic minced or chopped
    1lb of Lean Ground Turkey, Chicken, Bison or Beef
    Salt and Pepper
    1 Can Black Beans drained and rinsed
    1 Can Diced Tomatoes
    4 cups Fresh Baby Spinach or 1 box Defrosted Frozen
    1 packet of Seeds of Change Brown Rice/Quinoa or 2 cups of Cooked Brown Rice


Tips

I have made this with all the meats listed above and love them all, you can also substitute to beans of your choice and seasoning of your choice as well. I discovered the Seeds of Change at Costco and BJ's, and also in the natural section of the grocery store(it takes 90sec in the microwave to cook).


Directions

Saute diced onion and garlic for 3 and add ground meat of choice, stir til cooked, approximately 5 minutes, season with sea salt and pepper, then add beans, tomatoes and spinach, cook for about 5 minutes and in meantime cook brown rice and add to pan for a simple one dish meal.
