Number of Servings: 1

Beans, black, 1 can drained and rinsed
    Beans, pinto, 1 can drained
Bush's Blackeye Peas, 1 can drained
Pace Chunky Salsa - Mild, 8 oz
Canned Tomatoes, 2 cans with chilis
    Chili powder, 3 tbsp
    Cumin seed, 1 tbsp
Yellow Sweet Corn, 2 cans, drained
Ground beef, extra lean, 1 lb.
    Onions, raw, 1 cup, chopped

Brown Onions & Ground beef (or turkey or chicken) in pan. Drain and add remaining ingredients. Limitations on ingredient list, but add 1 can of all the beans and corn, 2 cans diced tomatoes (I used diced with green chilis) vs. measuring all out.

Simmer for 30 min or throw into crock pot for several hours. Serve plain over rice. Sprinkle with cheese.
