Introduction

Number of Servings: 12

Ingredients

    1c. whole wheat flour
    1 1/2 tsp. baking soda
    1/4 tsp. salt
    1 1/4 c. light plain Soy Milk
    1/2 c. molasses
    1 egg
    2 Tbsp. canola oil
    2 c. All-Bran cereal
    1/2 c. raisins

Tips

You can reduce amount of oil, but need to add applesauce or pumpkin for moisture. You can also add cinnamon, nuts, or other stir-ins for variety.


Directions

Pour cereal into mixing bowl & add Silk; let sit while you preheat oven to 375F & spray muffin tins with cooking spray.
Add remaining liquid ingredients. Mix flour with salt & baking soda and add to liquids. Mix until all flour is moistened. Stir in raisins.
Spoon batter into muffin tins and bake for 20 minutes.
