Ingredients

    2 Tb. extra virgin olive oil
    1 large onion, diced
    4 cloves garlic, minced
    2 (28 oz.) cans crushed tomatoes
    1/4 cup grated carrots
    2 Tb. oregano
    1 Tb. basil
    1 Tb. parsley
    2 cups chopped fresh spinach (or 1 package frozen, thawed & drained) - Optional

Tips

The carrots add some sweetness and cut the acid of tomatoes. Adjust to your taste if necessary. (1-2 teaspoons of sugar cuts the acid as well if you don't want to use carrots.)

I add no salt as it doesn't seem to need it. If using fresh tomatoes, de-seed them first and lightly pulse in food processor.


Directions

In food processor, pulse onions, garlic and spinach until chopped, or chop by hand. Saute onions, garlic & spinach in olive oil until onions are tender. Add 2 cans of crushed tomatoes, 1/4 grated carrots, oregano, basil & parsley. Bring to boil, then immediately turn heat down to low. Simmer for at least 30 minutes, more if you have the time. Ready to serve.
