Ingredients

    Mushrooms, fresh, 1 cup, pieces or slices
    Broccoli, fresh, 1 cup, chopped
    Baby Carrots, raw, 5 medium
    *Couscous (dry), 1 cup
    Water, tap, 1.25 cup (8 fl oz)
    Curry powder, 1 tbsp
    *Pork, fresh, loin, center rib (chops), boneless, separable lean only, cooked, braised, 1 cup, diced
    Garlic infused EVOO

Directions

1. In a saucepan, boil water and add curry powder and couscous. Cook as directed.
2. In a saute' pan, heat EVOO and add all vegetables.
3. Saute' until tender.
4. After couscous is cooked add diced pork and sauted vegetables.
5. Season with salt and pepper to taste.

Serving Size: Makes 4 1 cup servings
