Ingredients

Per person
1 egg
125 ml milk
25 g sugar plus a 1/3 tsp
1/4 tsp cornflour
tiny pinch salt
vanilla pod or 1/4 tsp vanilla extract
Directions
Put the milk in a pan with the pod or extract.
Separate the egg while the milk is coming to the boil.
Beat the yolk with the 25 g sugar and cornflour, until pale and foamy. Keep beating as you pour over the milk and then return the custard to the pan, heating gently until it thickens. Pour into your serving dish and set aside to cool.
Beat the white until stiff (with different utensils or the white will not beat) and then make one or two quenelle shapes with two spoons. Float on simmering water for a few seconds before turning, continue until cooked. Cool for a minute on kitchen paper then place on the custard and chill for an hour.
