Ingredients

    1 3/4 cup oats
    3 egg whites
    3/4 cup unsweetened cocoa
    1/2 cup unsweetened applesauce
    1 tsp. vanilla extract
    1/2 cup greek yogurt
    1/2 tsp. cream of tarter
    1 1/2 tsp. baking powder
    1 1/2 tsp. baking soda
    1/4 tsp. salt
    1 cup hot water
    1/4 cup splenda + 2 Tbs. stevia
    1/2 cup semi sweet chocolate chips

Directions

mix all ingredients in blender except chocolate chips. Blend until smooth then add 1/2 chocolate chips set the other 1/2 aside. Line muffin tins with muffin liners. Bake at 350 for 10 minutes then put other 1/2 of chocolate chips on muffins then finish baking for another 2-5 minutes or until toothpick comes out clean.

    These muffins are excellent. They taste more like a cupcake so they can be a low fat, low calorie treat as well. - 3/3/12
