Ingredients

    1 corn tortilla
    Cooking spray
    2 tbs refried beans (fat free)
    1 tbsp salsa
    1 slice fat free American cheese, cut into small pieces
    cilantro
    1/4 cup chopped lettuce
    sour cream (optional, not included in nutrition info)

Tips

You can also pre-bake and store your corn tortillas to make this an even faster snack!


Directions

Preheat oven to 375. Spray corn tortilla lightly with cooking spray and bake for 10 minutes, or until crispy (watch it, it will go from not quite crisp to burnt very quickly). Remove from oven and let cool until you can handle it. Spread with refried beans, then salsa. Sprinkle with the cheese and put back into the oven until the cheese is melted. When it's done, sprinkle with cilantro and chopped lettuce.
