Ingredients
-
*1 Chicken Breast, cubed
*1/4 cup Sour Cream (recipe has full fat)
*1/2 Cup Cream of Chicken Soup, healthiest option!
*1/4 large onion, chopped
*2 cups mixed vegetables, thawed
*4 sheets of phyllo dough, thawed and cut in half.
*Salt and Pepper
*Garlic Powder
Directions
Preheat oven to 400 degrees
In sautee pan, cook onions and chicken until cooked through.
When cooked (about 5 minutes), put mixture into large bowl. Add all remaining ingredients except for phyllo dough. Toss until combined.
Split mixture into two ramekins (it's okay if they bulge a little).
Take one half of the phyllo sheets you've cut. Fold over and over until you get a square that covers the top of the ramekin. Repeat on the other ramekin.
Spray phyllo dough with cooking spray. Make sure all spots are covered.
Bake for 20-25 minutes, until crust is golden brown.
Eat and enjoy!
