Ingredients

    1 - 1/4 cups Pamela's Baking & Pancake Mix
    1 packet Eco-Planet Instant Hot Cereal - maple and brown sugar
    1/2 cup water
    1 Egg
    2 Tablespoon Truvia
    1/4 Cup Slivered Almonds
    1 Cup Blueberries

Tips

Substitute any fruit you'd like. One-half to one full cup will do. If you use pumpkin, which is delicious,use just 1/2 cup. Also, the recipe calculator could not find "Eco-Planet" so I chose the Quaker Oat's Oatmeal, which is NOT GLUTENT FREE, and is more calories. I'm not sure how much more.


Directions

Mix all ingredients together and spoon into greased muffin pan, 2/3 full. Bake in preheated 350 degree oven for 18 to 20 minutes.
