Introduction

Ingredients

    1 cup chopped onions
    4 or 5 cloves garlic
    1 cup diced zucchini
    1 cup diced carrots
    1/2 cup diced celery
    2 cups partially cooked or canned cannellini beans
    2 cups chopped Swiss Chard or other greens as preferred
    12 oz chicken breast cooked and diced
    8 cups chicken broth
    1 tbsp pesto (if desired)
    4 - 5 inch piece of parmesan rind optional (I keep the rinds frozen from the ends of the parmesan peice.)

Tips

The parmesan rind gives it a really good flavor, I freeze the ends of parmesan wedges for this use. You can also add grated parmesan when you serve the soup. The greens can be any that you like, escarole, kale, cabbage, I just really like swiss chard. This is easily made vegetarian by omitting the chicken and using vegetable broth or water.


Directions

Saute onions and garlic in a tiny bit of olive oil until just translucent, then add the remainder of the veggies, and salt and pepper to taste. Add the broth, the beans and the chicken. Put in the parmesan rind and cook for about 60 minutes at a low simmer. At the end, about 15 minutes before serving add pasta. Put pesto in at the very end.

Serve with a crusty italian bread!
