Ingredients

    1.25 lbs 99% fat free ground turkey
    1 c fat-free low-sodium chicken broth
    14.5 oz can diced tomatoes with chiles
    1 small onion, chopped
    3/4 c sweet corn, drained
    1/2 c low sodium red kidney beans, drained and rinsed
    3/4 c cornmeal
    1/2 c sliced black olives, drained
    .25 tsp Cajun seasoning
    1 tbsp fat free sour cream
    1/4 c shredded fat-free cheddar

Directions

Brown turkey in skillet for 7-9 minutes. Drain, and add crumbled turkey to crockpot.

Whisk together broth and cornmeal. Allow to thicken.

Put other ingredients over turkey. Pour cornmeal mixture over, and stir well.

Cook on high for 3 to 4 hours, or on low for 7 to 8 hours.

Top with shredded cheese and sour cream.
