Introduction

Ingredients

1/2 onion, diced
2-4 cloves garlic, chopped
1 lb ground turkey (my grandmother uses ground pork, which is super-tasty, but not as good for you)
soy sauce - a couple of tablespoons "to taste"
a dash of fish sauce (found in Asian section of grocery store)
1 medium potato, diced
6 eggs
paprika, salt and pepper to taste
Directions
Serves 6-8 (Nutritional info is for 1/6 of torta)
Prep and cooking time is approximate.
Use a large skillet!
Saute onions and garlic in a little oil.
Add ground turkey and brown the meat.
Add soy sauce and fish sauce.
Add potatoes, cover, and simmer until potatoes are done (can add a couple of tablespoons of water if it looks too "dry").
Transfer meat/potatoes to a bowl and set aside. (May need to drain the grease first.)
Whisk paprika/salt/pepper into the eggs.
Add a little oil to the skillet if necessary.
Pour eggs into the skillet, allow to cook slightly.
Pour meat/potatoes into the eggs in the skillet... spread evenly. Cook until eggs are done (I usually cover to cook more evenly and lower the temperature a little so the bottom doesn't over-cook).
Invert onto large plate. Cut into wedges and serve!
