Ingredients

1 cup cooked white kidney beans
2 tbsp oat bran or wheat bran
1/2 cup + 4 tbsp skim milk
2/3 cup Becel lite margarine
1 1/2 cup whole wheat flour
1 cup sugar substitute like Splenda
2/3 cup cocoa
2 eggs
4 Tsp vanilla extract
1 Tsp baking soda
1/2 cup unsweetened applesauce
Preheat oven to 375.
Tips
For muffins, remember to double the nutritional counts. For muffins, allow to cool for 5 minutes in tin and then remove from tin to allow to cool on a rack. ,
Directions
Put beans, bran, and 4 tbsp of skim milk in a food processor and puree until well blended.
Put margarine, flour, sugar substitute, bean puree, cocoa, remaining milk, eggs, vanilla and baking soda in a bowl and beat until combined.
Preheat the oven to 375. Drop the batter by the tablespoon full onto a baking sheet lined with parchment paper.
Bake until firm to touch, about 10 minutes for cookies, 18 - 20 minutes for muffins. If cooking muffins, test by inserting a toothpick. Let cool on a rack.
Serving Size: Makes 36 cookies, or you can make 18 muffins :)
