Introduction
This is my variation of the Company's Coming version This is my variation of the Company's Coming versionNumber of Servings: 9
Ingredients

1 c Egg Beaters
3 large eggs
1/2 c skim milk
Salt and Pepper to taste
1gram (tbsp) McCormick Seasoned Herb Medley
1 small onion chopped
1 c frozen peas partially cooked
1/2 c chopped green peppers
1 tsp oil
2/3 c reduced fat parmesan cheese
1 lb shrimp (cooked or uncooked)
Directions
Saute the onion and pepper in oil until tender. If the shrimp is precooked, add to pan with onion to heat. If not, cook first as directed and set aside. Remove from heat, add the partially cooked peas and cheese. Mix well and spread on the bottom of a non-stick square baking pan (8 x 8).
Mix the egg substitute, eggs and milk with a whisk. Add in seasoning, salt and pepper to taste. Pour the egg mixture over top of the shrimp mixture.
Bake at 350 for 30 minutes until eggs are set. Makes 9 pieces.
This goes excellent with a salad and toast for an easy family meal.
