Introduction

Ingredients

    Garlic minced, 1/2 cup (More or less to taste)
    Canned Diced Tomatoes, 105 oz can
    Canned Crushed Tomatoes 105 oz can
    Onions, raw, 2 cup, chopped
    Celery, raw, 2 cup, diced
    Fresh Basil leaves chopped, 6 tbsp (2-3 oz packs)
    Oregano, ground, 4 tbsp
    Salt, 2 tbsp
    Pepper, black, 6 tbsp
    Green Bell Pepper, 2 cups, chopped
    Mushrooms, fresh, 3 cup, pieces or slices
    Olive Oil, 1/4 cup

Tips

We can ours. Make this ahead of time so the flavors will blend ot least overnight. I divide the ingredients and use 2 smaller pots.


Directions

In a large sauce pan add enough olive oil to saute onions, peppers, celery, and mushrooms. In a 10 qt or larger sauce pan add the tomatoes and cook on low heat add basil, oregano, salt, peppers and sauted vegetables. Cook uncovered for at least an hour or to achieve the thickness desired for spaghetti or pizzas.
