Ingredients

    2 cups flour
    1 teaspoon baking soda
    1 teaspoon cinnamon
    1 cup unpacked brown sugar
    10 tablespoons unsalted butter
    3 eggs , well beaten
    2 cups grated carrots
    2 large tart apples , peeled and grated
    ½ cup almonds , sliced thin

Directions

1. Mix the flour, baking soda and cinnamon in a large bowl.
2. In a separate large bowl cream sugar, butter and eggs.
3. Add the grated carrots, grated apples, and almonds to the sugar, butter and egg mixture and then add to the flour mixture.
4. Bake at 350 degrees for approximately 12 minutes or until medium golden brown.

    Incredible!
    I really liked these muffins, but I did have to cook them almost 20 minutes. I assume that's due to my altitude. I filled my cupcake wrappers to the top and it made exactly 18 muffins. Reminds me of carrot cake, and really good with a bit of butter inside. - 5/1/16
