Ingredients

2 Eggs
2 1/2 inch slices of bell pepper (color of choice)
1 Whole Wheat English Muffin
1/2 Avocado
About 1 tsp Vegetable Oil
Fresh ground pepper to taste
Tips
It's okay to cook the eggs all the way through if you don't like them runny. It tastes fine either way. Other topping to try might be salsa or guacamole.
Directions
Lightly coat a skillet with vegetable oil, place it on the stove and then turn on stove to medium.
~Cut 2- 1/2 inch slices of Bell Pepper and place in skillet for 3 minutes.
~Cut Avocado in half and then slice one of the halves into 6 slices.
~Turn peppers over and break one egg into the hole of each slice (Try to keep the egg in tact.) Turn stove to low.
~When the egg seems to be white half way through, flip it over (don't expect it to look pretty.)
~Put the English muffin in the toaster.
~Cook eggs till the whites are cooked through (The yoke should still be runny.)
~Put the muffin on a plate and transfer the eggs to the top of the muffin slices.
~Top it with the avocados and pepper to taste.
