Introduction

Ingredients

    2.5 cups chickpeas (two 16 oz cans, rinsed, skins removed)
    1 large stalk of celery, chopped fine
    .25 cup chopped onion
    .75 grated carrot
    Half of a red sweet pepper, chopped

    Dressing:
    3 Tbsp. Kraft Mayo (reduced calorie olive oil version)
    1 Tbsp. Sriracha Hot Chili Sauce (or to taste)
    Mrs. Dash to taste
    Fresh ground pepper to taste

Directions

Rinse chickpeas, drain, and remove skins. Mash with potato masher in large bowl until it forms a texture much like egg salad. Chop celery, onion, carrot, and red pepper and add to mashed beans. Mix the dressing ingredients and adjust seasonings. Mix well with bean mixture. Chill and serve as sandwich or cracker spread.
