Ingredients

15 oz. can undrained salmon
1 c. crushed crackers
0.25 tsp. black pepper
1 Tbsp. granulated sugar
0.50 c. margarine for frying
Directions
In a medium bowl, put salmon, cracker crumbs, black pepper, and sugar.
Mix all with clean hands, breaking up any bones as you mash with fingers.
Heat 2 Tbsp. of margarine in a skillet. Drop some of the salmon mixture by spoonfuls into the hot margarine and platten the patties slightly with spatula. Fry until crispy brown on underside, then carefully flip and brown remaining side.
Continue frying patties until all is used up.
Make 8 to 10 small patties resulting in 4 servings.
May add an egg to this recipe to stiffen the batter. Can also add a little Old Bay seasoning and onion powder to taste. I love it this way.
