Ingredients

    Rice
    1 cup white rice
    2 cups water

    Chicken
    2 lbs. Chicken breast diced
    1 tbsp. olive oil
    1 cup dice onion
    3 cloves of garlic
    1 tbsp. poultry seasoning
    1 tbsp. pampered chef southwest seasoning
    1 tsp. lawry's seasoned salt
    1/4 tsp. ground red pepper
    1 can diced tomatoes
    1 can black beans, drained
    1 can yellow corn, drained
    1 8oz. can tomato sauce

Tips

You may use any type of rice or southwest seasoning. I used cans of low sodium for my ingredients.


Directions

Cook rice according to directions.
While rice is cooking, heat olive oil in large skillet.
Add seasonings.
Cook chicken in oil until no longer pink.
Add onion and garlic and cook until onion is almost transparent.
Add cans of tomatoes, black beans, corn and tomato sauce.
Allow to simmer until rice is finished cooking.
Serve chicken over rice.
