Ingredients

    2 tbsp unsweetened applesauce
    1 tbsp unsweetened vanilla almond milk
    1/4 cup egg whites
    1/8 tsp apple pie spice
    1/8 tsp cinnamon
    1/4 tsp vanilla
    1 slice light whole-wheat bread

    optional: sugar-free maple syrup for topping, or stevia sprinkled on top

Directions

Toast bread in toaster.
Combine egg whites, milk, applesauce, vanilla, and spices in a small bowl and mix well so spices are incorporated.
Tear up bread into a medium or large microwavable mug; pour egg mixture over top and stir gently to coat completely.
Microwave for about 3 minutes or until thoroughly set.
