Ingredients

    2 lbs pork roast
    1 large can white hominy
    2 cubes chicken bouillon
    1-3 dried Guajillo chiles
    2 cloves garlic
    1/2 medium onion
    2 bay leaves
    salt and pepper to taste

    For garnish (not included in nutritional values):
    sliced radishes
    shredded lettuce or cabbage
    cilantro
    green onion
    limes
    avocado
    salsa
    tortilla chips (baked or regular)

Tips

You can add hot sauce or chili powder to taste. When I use a lot of chiles, I reduce the amount of bouillon. Sometimes I'll use more hominy. The beauty of this meal is that you can modify it endlessly to suit your tastes.


Directions

Trim visible fat from pork roast. Place roast, chicken bouillon, chiles, garlic, bay leaves, and onion in crock pot (leave everything whole). Set on high for 3-4 hours or low 6-8, or until roast is tender.

Skim foam off surface and remove chiles, garlic, bay leaves, and onion. Shred pork, leaving bite-size pieces. Put pork back in crock pot.

Drain hominy; add to crock pot. Cook on high for 45-60 more minutes.

Prepare garnishes as desired and add to soup to taste.
