Although impossible to make delicious fudge without anything naughty, this has low calories and carbs by comparison to other truffles. These are also gluten-free. Ingredients

    1 bag sugar-free chocolate chips (Hershey's)
    1 pkg Fat-Free Philadelphia cream cheese, softened

    Options for Decorations:
    peanuts, crushed
    cocoa powder
    walnuts, crushed
    coconut
    instant coffee
    flavored non-dairy coffee creamer (powder)


Tips

For a different overall flavor, try Philadelphia Fat-Free Strawberry cream cheese.


Directions

1. In a double-boiler, melt down the chocolate and cream cheese while continuously stirring.
2. After it's all melted down, refrigerate overnight.
3. Using a tablespoon, scoop out some chocolate. Roll it in your palms to warm it up. Roll it in your chosen decorations.
4. Refrigerate until one hour before eating.

*For Micky Mouse Truffles:
3. Using a tablespoon, roll one scoop in your palms to form it.
4. Using a teaspoon, roll 2 scoops separably in your hands. Since they are now warmed up, attach them to the larger ball that you already made with the tablespoon.
5. Let chill until a half hour before eating.

The warmth of your hands from rolling the balls is what allows them to form to each other or take on some decorations, like the cocoa powder.
