Introduction

My friend brought back smoked salmon from Alaska, so I added it to this yogurt/spinach pie recipe, modified a few other ingredients, and make it once a month! Ingredients

    1 tbsp Olive oil
    1/2c Red onion, diced
    1/2c Orange bell pepper, diced
    2c Spinach, raw or thawed & drained
    1/2tsp Salt
    1/2tsp Black pepper
    1/4tsp Nutmeg
    16oz Greek yogurt, plain
    4 Eggs
    8oz Mozzarella, grated
    4oz Smoked salmon, such as Coho or Sockeye
    1 9" Pie crust*


Tips

* I always seem to have extra filling since the salmon was not original to the recipe, and because I use an 8" pie crust - if you make your own crust, save any trimmings for crust in case you need to put extra in a small loaf pan.


Directions

Saute onion, pepper in olive oil until partly soft. Add spinach and continue to cook, stirring frequently, and let water cook off. Add 3 seasonings and remove from heat.

Mix yogurt, eggs and mozzarella - I play with the amounts quite a bit so try more or less of each to your taste. Add chopped smoked salmon and blend evenly. Stir in cooled spinach/onion mixture till blended.

Pour into 9" pie crust and back at 350F for 1 hour.

Serving Size: Makes 6 slices
