Ingredients

4 oz. raw lean ground beef
1/4 cup chopped raw onion
1/2 raw sliced mushrooms
1 T. olive oil
1 glove minced garlic
1 T. cider vinegar
1 t. brown sugar, unpacked
1 medium fresh tomato, chopped
1 cup tomato sauce
1 tsp. oregano
2 T. chopped fresh basil
3 dashes salt
3 dashes pepper
2 cups fresh bean sprouts (Chinese style)
2 T. grated Parmesean cheese
Directions
Makes 2 servings
In a skillet or saute pan add olive oil, ground beef, onion, garlic and mushrooms. Brown until beef is done. Add tomato sauce, tomatoes, brown sugar, vinegar, oregano, 1 of the T. of basil, salt and pepper. Simmer on low heat 10 minutes.
While sauce is simmering, heat 4 cups of water to a boil. Add the fresh bean sprouts. Turn down heat to medium, and cook 1 minute only. Drain in a collander.
Place 1/2 of the bean sprouts on each of 2 plates. Cover each of the servings of bean sprouts with 1/2 of the sauce. Sprinkle 1 T. of Parmesan on each serving. Garnish each serving with remaining basil.
I don't like bean sprouts generally, but this was really, really good!
