Ingredients

    2 Tbl bacon fat
    2 Tbl olive oil
    3 leeks, chopped
    6 russet potatos, peeled and cut 1"
    4 cups vegetable broth
    water as needed

Tips

To blend hot soup, remove clear center cap from blender and replace with a paper towel over the top.


Directions

Put bacon fat and olive oil in pan. Chop up leeks, add to pan cover and cook on low while you prepare the potatoes. Add broth. Add potatoes. Add water as neccessary so that it stirs freely. Cook until potatoes are soft. Blend in blender to make creamy. Serve with black pepper.
